Some describe visible features such as gills, pores, stems, caps, veils, colors, and tissue reactions, while others refer to microscopic structures, fungal reproduction, substrate preparation, contamination control, environmental management, and commercial growing practices. A
Agar – A gelatinous material obtained from certain red algae and used to solidify nutrient media for growing fungal cultures in laboratories.
Agaric – A mushroom having a distinct cap with gills on its lower surface, although the term is sometimes used more broadly for mushrooms with a typical cap-and-stem form.
Agaricoid – Having the general form of a typical gilled mushroom, usually with a cap, stem, and radiating gills.
Air Exchange – The replacement of carbon-dioxide-rich air with fresh air in a mushroom-growing space to provide oxygen and regulate fruiting conditions.
Alpha-Amanitin – A highly toxic cyclic peptide found in certain poisonous mushrooms, particularly some species of Amanita, Galerina, and Lepiota.
Amphigenous – Occurring or producing spores on more than one surface of a structure, such as on both sides of a leaf or flattened fruiting body.
Anastomosis – The fusion of fungal hyphae or hyphal branches, permitting continuity of cytoplasm and sometimes the movement of nuclei or nutrients.
Annulus – A ring or skirt of tissue left on a mushroom stem after the partial veil breaks as the cap expands.
Apiculus – A small projection on a basidiospore marking the point where the spore was attached to its sterigma.
Apothecium – An open, cup-shaped, saucer-shaped, or disc-shaped fruiting body in which asci are exposed on the upper surface.
Appressed – Lying flat or pressed closely against a surface, as may be said of scales, fibers, or other features on a mushroom cap or stem.
Arbuscule – A finely branched structure formed by an arbuscular mycorrhizal fungus inside a plant-root cell, where nutrient exchange occurs.
Ascocarp – A traditional term for the sexual fruiting body of an ascomycete fungus; the preferred modern term is often ascoma.
Ascogenous Hypha – A specialized hypha within an ascoma from which asci develop.
Ascoma – The multicellular sexual fruiting structure of an ascomycete fungus in which asci and ascospores are produced.
Ascomycete – A fungus belonging to the phylum Ascomycota, whose sexual spores are normally produced inside microscopic sacs called asci.
Ascospore – A sexual spore produced inside an ascus.
Ascus – A microscopic sac-like cell in which sexual spores called ascospores are produced.
B
Basidiocarp – The spore-producing fruiting body of a basidiomycete fungus; also called a basidiome.
Basidiome – The multicellular fruiting structure of a basidiomycete fungus, including typical mushrooms, puffballs, brackets, and many crust fungi.
Basidiomycete – A fungus belonging to the phylum Basidiomycota, in which sexual spores are normally produced externally on basidia.
Basidiospore – A sexual spore produced externally on a basidium.
Basidium – A microscopic spore-producing cell that usually bears basidiospores on slender projections called sterigmata.
Biological Efficiency – A cultivation measurement calculated by dividing the fresh weight of mushrooms harvested by the dry weight of the original substrate and multiplying by 100.
Bipolar Mating System – A fungal compatibility system in which mating behavior is determined primarily by alleles at one mating-type locus.
Blotch Disease – A bacterial mushroom disease that produces discolored, sunken, or slimy lesions on caps, commonly associated with bacteria in the Pseudomonas group.
Bluing Reaction – A blue or blue-green discoloration that develops in the tissue of certain mushrooms after bruising, cutting, or handling.
Bolete – A fleshy mushroom that generally has a layer of vertical tubes ending in pores beneath its cap rather than true gills.
Bracket Fungus – A shelf-like or bracket-shaped fungal fruiting body that commonly grows from wood and often has pores on its lower surface.
Butt Rot – Fungal decay affecting the lower trunk, root collar, or major roots of a living tree.
C
Cap – The expanded upper portion of many mushroom fruiting bodies; the technical term is pileus.
Carbon Dioxide Concentration – The amount of carbon dioxide present in a growing environment, usually measured in parts per million and managed through ventilation.
Casing Layer – A moist, usually low-nutrient material placed over colonized substrate to retain water and create conditions favorable for pinning in certain cultivated mushrooms.
Caulocystidia – Specialized sterile cells occurring on the surface of a mushroom stem.
Cellulose – A structural carbohydrate in plant cell walls that many decomposer fungi can break down with extracellular enzymes.
Cheilocystidia – Sterile microscopic cells located along the edges of mushroom gills.
Chlamydospore – A thick-walled resting or survival spore formed from a modified hyphal cell or yeast cell.
Clamp Connection – A small, bridge-like hyphal structure that helps maintain paired compatible nuclei during cell division in many basidiomycetes.
Clavate – Club-shaped, usually broader toward the top and narrower toward the base.
Colonization – The process by which fungal mycelium grows through and occupies a substrate.
Conidium – A nonmotile asexual spore produced externally by a fungus, usually on a specialized hypha or conidiophore.
Context – The inner sterile tissue or flesh of a fungal fruiting body, particularly in polypores and other firm fungi.
Contamination – The unintended presence of competing molds, bacteria, yeasts, mites, insects, or other organisms in a fungal culture or growing substrate.
Cortina – A delicate, cobweb-like partial veil extending between the cap margin and stem in young mushrooms of certain genera, especially Cortinarius.
Culture Medium – A prepared solid or liquid nutrient material used to grow, isolate, maintain, or study fungal cultures.
D
Decurrent – Describing gills, ridges, teeth, or pores that extend downward along the mushroom stem.
Deliquescence – The self-digestion and liquefaction of mature mushroom tissue, most famously occurring in many ink-cap mushrooms.
Dikaryon – A fungal cell or mycelium containing two genetically distinct haploid nuclei that remain separate within each cell.
Diploid – Having two complete sets of chromosomes within a nucleus.
Dry Bubble Disease – A disease of cultivated mushrooms caused principally by Lecanicillium fungicola, producing malformed mushrooms, dry lesions, or undifferentiated masses of tissue.
E
Eccentric – Describing a mushroom stem that is attached off-center rather than in the middle of the cap.
Ectomycorrhiza – A symbiotic association in which fungal hyphae surround plant roots without penetrating the root cells.
Edibility – The suitability of a mushroom for safe human consumption after proper identification and, where appropriate, preparation.
Elater – A thread-like structure associated with spore dispersal in certain fungi.
Endophyte – A fungus that lives within healthy plant tissue without immediately causing disease.
Enzyme – A biological catalyst that speeds chemical reactions, including the breakdown of wood, leaves, and other organic materials by fungi.
Epicutis – The outermost layer of a mushroom cap cuticle.
Epigeous – Producing fruiting bodies above the ground surface.
Exoperidium – The outer protective layer surrounding puffballs, earthstars, and similar enclosed fungi.
Exsiccata – A carefully dried fungal specimen preserved for scientific study or herbarium collections.
F
False Gills – Thick, blunt ridges beneath the cap that resemble gills but differ structurally, as found in chanterelles.
Fascicle – A tight cluster of mushrooms arising from a common base.
Fasciculate – Growing in dense clusters from the same point.
Fast Colonizer – A fungal strain that rapidly spreads throughout a suitable substrate.
Felted Mycelium – Dense, wool-like mycelial growth covering a substrate.
Fermentation – Metabolic activity occurring with little or no oxygen, often undesirable in mushroom substrates.
Fibrillose – Covered with fine fibers or thread-like scales.
Filamentous Fungus – A fungus composed primarily of branching hyphae rather than yeast-like cells.
Flush – A crop of mushrooms that matures during the same fruiting cycle.
Fomitopsis – A genus of wood-decaying bracket fungi that typically causes brown rot.
Fruiting Body – The reproductive structure of a fungus that produces spores.
